What is Green Tea Extract Polyphenols?
Green tea extract polyphenols is a general term for polyphenols in tea. It is an amorphous powder and is easily soluble in water. The content of tea polyphenols in green tea is relatively high, accounting for 15% to 30% of its mass. The main components of tea polyphenols are: flavanones, anthocyanins, flavonols and anthocyanins, phenolic acids and depsid acids Class 6 compounds. Among them, flavanones (mainly catechin compounds) are the most important, accounting for 60% to 80% of the total tea polyphenols, followed by flavonoids, and other phenolic substances are relatively small. Tea polyphenols have many physiological activities such as anti-oxidation, anti-radiation, anti-aging, lowering blood fat, lowering blood sugar, inhibiting bacteria and enzymes.
Application in the food industry
1. Used as an antioxidant
Green tea extract polyphenols are used as antioxidants. Since most of the tea polyphenols contain more than two ortho-hydroxy polyphenols and have strong hydrogen supply capacity, they are an ideal antioxidant. Among the four main catechins, the antioxidant capacity is EGCG>EGC>ECG>EC. As an antioxidant for oily foods, it has excellent antioxidant properties, and its effectiveness is far superior to the synthetic antioxidants 2,6-di-tert-butyl-4-methylphenol (BHT) and butylhydroxy fennel (BHA).
