Disodium glycyrrhizinate is a white or light yellow powder with a very sweet taste and a special sweet aftertaste. Disodium glycyrrhizinate also has a flavor-enhancing effect. It can be used as a flavor enhancer for edible spices and has a good effect on dairy products and cocoa products. The licorice is crushed, extracted with water, concentrated into a dark brown viscous liquid, and then refined with dilute ethanol to obtain glycyrrhizic acid crystals. If necessary, activated carbon can be added for decolorization. Then it is converted into disodium salt to obtain the product disodium glycyrrhizinate.
