An oligopeptide is a short-chain peptide that can be up to 20–25 amino acids long. They are typically characterized by their small size and shorter chains of amides linking the subunits together and can be hydrolyzed enzymatically.
Wheat oligopeptides are small-molecule peptides that can be obtained from natural foods such as wheat protein powder and then subjected to targeted digestion. The process starts with pulping the wheat gluten powder, which is followed by protease digestion in order to break down proteins into smaller components called amino acids. After this stage, it separates them using various techniques like filtration or spray drying before finally spraying a solution onto an inert carrier material such as maltodextrin for binding together of all ingredients under specific temperature conditions.
Wheat oligopeptides powder is approved as a new resource food early in 2012 by the Ministry of Health of the People’s Republic of China (MOH), now part of the National Health Commission of the People’s Republic of China (NHC).
